I hope this fine fall weekend has been filled with big laughs, fresh air, and warming foods. The greatest way to honor this season of slowing down is by making a big batch of meat & veggies to marinate in the crockpot all day, filling your home with its aroma.
We can take this idea of grounding and slowing down into all aspects of our life, and can practice it by consciously soaking in moments. Turn them into movies, into stills. Don’t ever forget the seconds that make life soft and beautiful. Collect them, and review them in your dreams.
Tonight I am making a rich, warm stew and want to share this recipe with you all:
Ingredients:
1 butternut squash
1 onion
1/2 stick butter
A lot of minced garlic
2 lb. ground meat (50/50 venison & beef mixture for me)
1 bag bone broth
about 1/2 cup Orange Juice
any other veggies your heart desires
Spices: nutmeg, paprika, cardamom — anything that is warming!
Instructions:
Peel & cut squash and onions.
Place butter, garlic, squash, onions, veggies, broth, OJ & spices in crock-pot for 2 hours.
In the meantime, prep meatballs by combining minced onions and spices to meat. Let sit in fridge.
After 2 hours, pan sear the meatballs, then place in the crockpot for another hour.
Heat up a warm baguette, light a candle, and enjoy.
